The Tilbury Hotel is eminently satisfying, from the cheery greeting as you wander into the ground-floor restaurant to the flourish with which your finishing espresso and cognac are set on the table.

Chef Bryan O’Callaghan has created a contemporary Australian menu with Italian influences; it is driven largely by the extensive fresh produce available seasonally.

Complimentary flavours mix and match dishes such as plump blue-eye trevalla with pea and mint mash, and pink, tender duck breast with creamy fennel puree and pickled cherries. House-made gelato edges out banana tatin as a cool way to finish. Noise levels rise as the crowd warms up, but it’s hard not to have fun here.
